Summer is Calling!

Whether you’ve been enjoying the hot weather or you’ve been hiding at home with the AC, the one thing we can all agree on is that summer is the best season for fresh vegetables and fruit. Everything is at its peak which makes mealtime a breeze. Today I’m sharing a Tomato & Burrata Salad—I’m using salad pretty loosely here given that there is a big ball of cheese in the middle of this one. Pair this with some fresh garlic bread or focaccia and you are bound to impress. The whole dish comes together extremely quickly with minimal ingredients making it a perfect addition to any summer table.

When picking out tomatoes for the salad, go with whatever you like. Tomatoes are delicious this time of year and you really can’t go wrong. Burrata is an Italian cheese made from mozzarella and cream, but if you can’t find any, you can sub in some bocconcini or even fresh mozzarella will do the trick in a pinch.

INGREDIENTS

  • Fresh Burrata
  • 2 pints of cherry tomatoes (or whatever tomatoes you like), halved
  • 1/4 red onion, finely chopped
  • 1/4 cup Italian parsley, finely chopped
  • 1/4 cup basil, finely chopped
  • Olive oil
  • Red wine vinegar
  • Salt & Pepper

STEPS

  1. Combine the tomatoes, red onion, parsley and basil in a bowl. Drizzle over olive oil, red wine vinegar and salt & pepper to taste. Start with a small amount and work your way up. There is no magic to this, do it until it tastes good to you!
  2. Place the burrata in the middle of a large plate. Surround the burrata with your tomato and onion salad. Garnish with some basil leaves. Pair with some fresh garlic bread or focaccia and enjoy!
